Cranberry Sweet Potato Cookies   Print Recipe Ingredients 2 sweet potatoes cooked and peeled1/8 cup raw honey2 eggs large1 teaspoon ground cinnamon1/2 teaspoon baking soda1/3 cup dried (unsweetened) cranberries substitute fresh, depending on season1 cup gluten-free flour Instructions Preheat the oven to 350 degrees.Bake the sweet potatoes for 30 minutes or until soft enough to easily mash. Allow sweet potatoes to cool, then peel and mash in large bowl. Combine all ingredients and mix well until it forms a thick dough. Roll out dough onto counter and cut out cookies into desired shape. Sweet potatoes are rich in fiber, making them an excellent treat to aid in your dog’s digestive health. The sugary sweetness of a sweet potato is hard to resist and—thankfully—these root vegetables are perfectly safe for your pup. They’re laden with essential nutrients your dog needs for a healthy diet and, when cooked, make a wonderful treat. As long as you scrub for mold the skins are safe to eat, but this recipe works well without them. Just make sure you remove any traces of the vine, as that can be toxic to pets. Cinnamon Sweet Potato Jerky   Print Recipe Ingredients 2 large sweet potatoes peeled1/4 cup ground cinnamon1/8 cup coconut oil Instructions Preheat oven to 350 degrees.Wash sweet potatoes thoroughly to remove dirt. Poke small holes through the skin of the potatoes before cooking. Bake sweet potatoes for 45 minutes on foil-lined baking sheet. Turn off heat and allow to cool in the oven for 2 hours. (Optionally, you could allow them to cool off in the refrigerator if you'd rather cut them cold) Peel sweet potatoes to remove skin, then cut into 1/4 inch thick strips. Lightly baste the tops and bottoms of each strip with a coating of coconut oil. Sprinkle the tops of each strip with ground cinnamon. Return strips to oven and bake at 350 degrees for 30 minutes, checking regularly to avoid burning the sweet potatoes. Jerky is done when ends are slightly black and center is firm, but still chewy.
