Wash sweet potatoes thoroughly to remove dirt. Poke small holes through the skin of the potatoes before cooking.
Bake sweet potatoes for 45 minutes on foil-lined baking sheet. Turn off heat and allow to cool in the oven for 2 hours. (Optionally, you could allow them to cool off in the refrigerator if you’d rather cut them cold)
Peel sweet potatoes to remove skin, then cut into 1/4 inch thick strips.
Lightly baste the tops and bottoms of each strip with a coating of coconut oil.
Sprinkle the tops of each strip with ground cinnamon.
Return strips to oven and bake at 350 degrees for 30 minutes, checking regularly to avoid burning the sweet potatoes. Jerky is done when ends are slightly black and center is firm, but still chewy.
Ovens vary so it might take a couple of tries before finding the right combination of time and temperature. When storing, keep strips in a airtight container. These sweet potato jerky treats usually last for a couple of weeks!
