Preheat oven to 350°F. Grease an 8×8 baking pan with olive oil.
Mash banana in a small bowl.
In a large bowl mix the quinoa flour, mashed banana, dry food, cranberries, honey and egg together thoroughly until dough forms.
Place batter in baking pan. Use a spatula to level the batter so the bars bake evenly.
Place in oven and bake for 25 minutes.
Remove from oven and let cool for 2 hours. Cut into squares and serve.
