Holiday Fruitcake for Pups

Johnny Carson famously said, “The worst Christmas gift is fruitcake... There is only one fruitcake in the entire world, and people keep sending it to each other, year after year.” Unlike the typical fruitcake for humans you hear about around the holidays, this fruitcake for pups is something they'll actually enjoy eating!
We'd recommend making these using mini muffin (or regular muffin pans). Freeze what's not eaten right away to save for later.
Ingredients

1 tsp baking soda

1 banana

1 tsp cinnamon

1/2 cup coconut flour

1/3 cup dried (unsweetened) cranberries

1/3 cup dried apple

2 eggs

1/2 cup prepared Honest Kitchen Goat's Milk

1/3 cup shredded coconut

1/2 cup almond flour
Directions
Preheat your oven to 350° F
- Combine cranberries, shredded coconut and apples in a bowl with baking soda and pour enough boiling water over the fruit to cover it
In a separate bowl, mash the banana with a fork and beat in the eggs and combine Goat's Milk
- Mix in the flours and cinnamon
- Add the dried fruit mixture
- Spoon out evenly in the muffin tray (should be enough for each to be level)
- Bake for 22-27 minutes
- Enjoy immensely
Recipe Note
If you don't have The Honest Kitchen's Instant Goat's Milk on hand, you can substitute for 1/2 cup of yogurt.
